Tuile Cookies
1 Cup all purpose flour, sifted
1/2 cup unsalted butter, at room temperature
2/3 cup confectioners' sugar
4 large egg whites, at room temperature
1/2 tsp. almond extract

In the bowl of an electric mixer, beat butter and sugar until well combined. Beat in egg whites one at a time, beating for 4 minutes after each addition. (medium speed) Scrape bowl often to be sure that everything is incorporated. (I like to scrape once during each 4 minute interval). Add the extract and beat just until combined. Add the flour and mix just until combined.

To bake cookies, line a baking sheet with parchment paper. Place a plastic stencil (click here to learn how to make stencil) on baking sheet, and drop about 1/2 tsp of batter inside stencil. Using a small angled spatula, spread the batter until it is smooth and even with your stencil. Remove stencil, and continue with remaining batter. Bake in a preheated 400 degree oven for 4 minutes, until barely golden around edges. Immediately remove cookies from the baking sheet and shape by laying over a rolling pin or other cylindrical form.
